Ingredients

  • 400 ml coconut milk
  • 80 g chia seeds
  • 25 g raw honey - or preferred sweetener
  • 1 tsp vanilla bean paste

Instructions

  • Add all ingredients to mixer bowl, cook for 5 min/37°C or 100°F/speed 2/reverse/MC on.
  • Transfer to an airtight container and refrigerate for at least an hour before serving
  • Top with toasted coconut and frozen blueberries!

Notes

Serves 4-6 depending on portion sizes and bulking with fruits, nuts and coconut cream!

    This was beautiful. Unfortunately I didn’t have vanilla bean paste, only extract. Were I to use extract again, I will halve the amount. But it was still so delicious. I served it with blueberries, banana and honey. Next time I’ll omit the honey as the pudding is perfectly sweet enough as is.

  2. I have loved every skinny mixers recipe I have made, so thought I would put you to the test. I’ve never liked chia pudding before, but made this last night and just had some for breakfast with Greek yoghurt and choconit chips. So yum! Can’t wait to add some mango.

  3. I tried this last night and I’m not sure whether I did something wrong. I used black chia seeds, however I found it had a slightly strange taste. I have never had chia seeds before. Is this the taste or is there something wrong? I used vanilla bean paste and coconut milk from Aldi (which is what I use for everything else with no problems). I was just so underwhelmed by it .

    This is the first time I haven’t really enjoyed a recipe and am wondering why.

  4. Fantastic. I bought very expensive black chia seeds and I haven’t had success…UNTIL now cooking them made them soft, creamy and yummy.
