Mango Chicken Curry would have to be one of the most heavily requested recipes since I first began recipe developing 10 years ago.

I could never wrap my head around the idea of combining mango in a savoury curry, but now I have tried it I am hooked!

We have a slow cooker variation for this recipe but it is a great mid-week dinner cooked in 30 min.

Hopefully this Thermomix & regular cooking methods cookbook helps takes a little bit of stress out of dinner time and help answer the question “What’s for dinner?” 🥰

Mango Curry Chicken Traybake:

Mez made an epic all-in-one traybake version of the new Mango Chicken Curry 🥭 from our Dinners 2 cookbook!
 
To cook as a traybake:
  1. Follow the recipe to chop and saute the onion, garlic and ginger.
  2. Then add all ingredients in the recipe except chicken and coriander. Mez recommends changing the coconut cream to coconut milk. Blend and transfer to the baking dish.
  3. ADD an extra 500 ml water and 150 g (1/2 cup) arborio rice to the sauce.
  4. Place 1.2 kg chicken pieces on top of the rice and sauce mixture.
  5. Bake uncovered for 45-60 min at 180°C. You can place under the grill at the end for a little more colour on the chicken if you like!
