Mango Chicken Curry would have to be one of the most heavily requested recipes since I first began recipe developing 10 years ago.
I could never wrap my head around the idea of combining mango in a savoury curry, but now I have tried it I am hooked!
We have a slow cooker variation for this recipe but it is a great mid-week dinner cooked in 30 min.
Hopefully this Thermomix & regular cooking methods cookbook helps takes a little bit of stress out of dinner time and help answer the question “What’s for dinner?”

Mango Curry Chicken Traybake:
- Follow the recipe to chop and saute the onion, garlic and ginger.
- Then add all ingredients in the recipe except chicken and coriander. Mez recommends changing the coconut cream to coconut milk. Blend and transfer to the baking dish.
- ADD an extra 500 ml water and 150 g (1/2 cup) arborio rice to the sauce.
- Place 1.2 kg chicken pieces on top of the rice and sauce mixture.
- Bake uncovered for 45-60 min at 180°C. You can place under the grill at the end for a little more colour on the chicken if you like!
