A little bit retro, but this Meatloaf Parmesan in SkinnyAmerica is one the family will be begging for!

Don’t be turned off by it being a meatloaf… Imagine a giant meatball, smothered in marinara sauce topped with melted cheese and fresh basil. If you love Chicken Parmigiana‘s you will love this recipe! 

Make sure the leftovers make it into a sandwich the next day!

This recipe makes a large meatloaf – perfect for larger families or making sure there are leftovers for the next day (I love the motto of cooking once, eating multiple times).

Now if you are only cooking for 2 (or in my case 3), I love to make this recipe and split into 2 or 3 and freeze without finishing the cook. That way I have easy dinners in the freezer ready for nights I don’t feel like cooking.

  • tomato passata – is a sauce made of pureed tomato. 
  • stock concentrate – we make our own stock concentrate for the best flavour however you can add a stock cube or two to replace.

Freezing Tips

We recommend cooking the meatloaf up until Step 10 and then freezing. Bake covered at 180°C until defrosted. Remove foil, add cheese and basil fresh before cooking got 10 min to finish cooking.

You can split the meatloaf between 2-3 foil trays, freeze and if small enough you can even use the air fryer to bake. This tip is perfect for anyone not needing to feed a number of people.

This meal also freezes well fully cooked and doesn’t dry out.
