Guest Recipe: Imogene’s Healthy Snicker Bites

When we put the call to the Skinnymixers Community for recipes to help celebrate 10 years of Skinnymixers, the lovely Imogene sent in these Healthy Snicker Bites.

“Although this is a very simple recipe, they are the perfect sweet treat for when I’m in desperate need of a chocolate fix, or an impromptu catch up with girlfriends!

You can even use protein boosted peanut butter for extra protein and I have even been known to hide the container in a bag of mixed frozen vegetables so the kids won’t eat them all!”

You can mix and match the toppings to your own personal preference.

The medjool dates give you the sweetness of caramel coated in the chocolate and nuts.

These Healthy Snicker Bites would also be the perfect addition to a Grazing Platter or Dessert Board.

Equipment

  • baking paper
  • baking tray

Ingredients

  • 12 medjool dates - pitted
  • 150 g dark chocolate - roughly chopped (we recommend Lindt Smooth 70%)
  • 60 g peanut butter - or nut butter of choice

Suggested toppings

  • 2 Tbsp chopped peanuts
  • 2 Tbsp sea salt flakes
  • 2 Tbsp pistachios - roughly chopped

Instructions

  • If your dates are not pitted remove pit by slicing lengthways and remove pit from all the dates.
  • Add 1 tsp peanut butter to the middle of each date and close the date. Repeat for the remaining dates and place in the freezer.
  • Add chocolate to the mixer bowl and mill 10 sec/Speed 8/MC on. Scrape mixer bowl down.
  • Melt chocolate for 3 min/50℃/speed 2. While the chocolate is melting line a small tray with baking paper and remove the dates from the freezer.
  • Once chocolate is melted, one by one dip the stuffed dates into the chocolate and remove to the tray using a fork or a skewer.
  • Immediately sprinkle with desired toppings and place in fridge to set completely. Store in an airtight container in the fridge or freezer.

Notes

Nut Free: Replace peanut butter with Roasted Seed Butter and replace nut toppings with toasted seeds and coconut.
Dairy Free: Use Dairy Free Dark Chocolate
