A big thank you to Tanya Halse for allowing me to blog her popular No Fail Creamy Cauliflower Mash Thermomix recipe.

This recipe is Low Carb Healthy Fat (LCHF) compliant and is a great side to serve with my Chicken Cacciatore or Beef Bourguinon.

Guest Recipe: Tanya's No Fail Cauliflower Mash

Cauliflower mash is a great low carb alternative and this recipe tastes just like regular mashed potatoes!

Ingredients

  • 500 g cauliflower florets - roughly chopped
  • 40 g Butter
  • 75 g Philadephia cream cheese - softened, (see tips for alternatives)
  • salt and pepper to taste

Instructions

  • Place chopped cauliflower into TM bowl and turbo pulse 3-4 times.
  • Scrape down sides of bowl.
  • Add butter and cook for 12 min/100°C or 212°F/speed 1/MC on
  • Add cream cheese, salt and pepper and blend for 30 sec/speed 7/MC on

Notes

**The cauli mash freezes well.
**DOUBLING THE RECIPE: increase cooking time to 15 minutes and double all ingredients (particularly recommended if using to top a pie)
**Cream cheese can be substituted with cooking cream or coconut cream (for a dairy free version). Sour cream and milk also both work well.
**Different flavours can be added – try adding garlic, chives or parmesan cheese before blending for an added burst of flavour.

    I cooked this little wonder tonight however I used Marscarpone for the cream cheese. This was only because I had some of this left in the fridge from an earlier risotto recipe and I wanted to use it up. It worked a treat I must say. This recipe was divine. Will make again when I have more cauliflowers and I will try with other cream cheese substitutes in the future (ie. cottage cheese). Thanks for a wonderful recipe.

  5. It’s 2019 and I’ve had my thermomix for around 12 years. This morning I thought I’d make myself cauliflower mash for breakfast. How have I never done this before? I tried to give my 29yo son a taste as he likes cauliflower but his mouth began getting all saliverie (not in a good way) because he thought it looks too much like the texture of Homous. Oh well more for mummy.

  7. I cannot believe how easy this is to make and the cream cheese takes the flavour to the next level! This has become a regular (potato/rice/pasta replacement) in our household since we are trying to cut back on carbohydrates. Thanks for sharing.

    This was so good. I am lactose intolerant so didn’t add the cream cheese.
    This pairs nicely with the chicken cacciatore in THM2 to make a complete meal.

  14. This recipe is a weekly must for us! It’s a great sub for white sauce in a lasagne, on top of corner bees and works well with frozen cauliflower too!
