If you have never tried Birria Tacos before you are in for a TREAT. Juicy, cheesy, delicious – this recipe is a showstopper. Prepare your tastebuds for an adventure through Mexico with our Taco section in our NEW cookbook ‘SkinnyAmerica‘.

These homemade Birria Tacos are the best Birria Tacos I have ever tasted. They take a little bit of extra time but they are completely worth it. 

What are Birria Tacos?

Birria is a variation of barbacoa from Western Mexico. We use chuck beef in this recipe however it is traditionally made with goat and can be made with lamb too. 

The meat is marinated in a flavourful adobo marinade with garlic, apple cider vinegar, chipotle chilli in adobo sauce, lime. cumin and oregano. Then cooked in a spicy, super savoury braising liquid to flavour the meat and make the consumme that you serve with the tacos for dipping! 

Once the beef is cooked and pulled, we then stuff it in a taco with some cheese and pan fry to crispy perfection. 

With this recipe you will have more meat and braising liquid than you need for the tacos, however you can make more tacos or use the meat for burritos, jacket potatoes or even nachos.

Cooking Methods 

Our Birria Taco recipe has the following cooking instructions to cook the pulled Birria beef

  • oven
  • slow cooker
  • smoker – for this method we smoke the sliced chuck first and then use the boating method to braise. When boating the meat you want the tray to fit the meat snugly and not bee too much bigger.

What you will need to make Birria Tacos  in SkinnyAmerica

This recipes uses Chipotle in Adobo Sauce that you can find in your supermarket Mexican section. This particular brand you can purchase from Woolworths, it will be smokier and spicier, the one from Coles is a little more mild but still delicious!

  • 1500-2000 g whole chuck beef or brisket
  • apple cider vinegar
  • beer - light coloured
  • brown onion
