In the cookbook we have variations to make the Cowboy Butter: Low Carb, Lower Calorie, Low Fodmap, halved and doubled. I even have it on good authority that the low carb version of the Croutons using broccoli stems is delicious on top of the Broccoli Cheddar Soup too!
Storage
Store in the fridge for up to 3 days or freeze. I always try to keep some compound butter in the freezer to add flavour to a fast dinner.
