Bacon & Vegetable Soup Skinnymixers

Bacon & Vegetable Soup is the recipe that started it all – Inspired by Maddy from Forum Thermomix, this is the first recipe I ever released on the Skinnymixers Facebook Group and a very popular one ever since.

It is a hearty, filling and nourishing soup without the calories. Super budget friendly and you can utilise whatever vegetables that you have in the fridge.

The Bacon & Vegetable Soup recipe is a free recipe and it also features in The Healthy Mix Cookbook with updated variations for different dietary needs. Gluten free, dairy free and can easily be made vegetarian, LCHF or Keto.

You can omit the bacon for a vegetarian version or omit the carrot and pasta for the LCHF / Keto version.

Pin for Bacon & Vegetable Soup

  1. Love this soup, cooked as is and also used it as a base and put in beef soup bones, simmered on stove top until the meat was falling off the bones.. Was lovely thick and hearty..
    Fussy DH really enjoyed it..
    Thanx Nik

  2. YUM!!! That is SO good. Going to make another batch & freeze for kids for easy, healthy & filling afternoon teas. I served with Parmesan instead of parsley & lemon zest.

  3. This is tasty! Really felt like soup tonight, remembered this one, had all the ingredients in the house and Bob’s your uncle. So easy and so yum. Makes heaps, so that is tomorrow’s lunch sorted.
    Thanks Nik

  4. Thank you so much for this recipe Nik, it is lovely and much needed at this time of year. I added a bit more veg and some pearl barley instead of pasta, yum! I don’t think there will be any going into the freezer 😉

  5. My husband made this for dinner tonight, and it was truly delicious! Thanks for a wonderful recipe.

  6. This was seriously yummy, forgot the lemon zest but it was still good. The pasta went to the bottom of the thermo bowl so our dinner was basically vege soup & our left overs were full of pasta. I’ll have to stir better next time. Will be just as good with no pasta.

  7. I made this bacon soup yesterday as I’m doing the 5:2 diet and it was my fast day. It’s delicious and very filling. I really appreciate the calorie count at the end. It’s a very open ended recipe I made it as is (without the pasta) but I’m sure you could make it into a family meal with the addition of more meat and the pasta. Yummo!

  8. This soup is amazing! So cheap and tasty. My fussy 1 year old loved it and my partner said he would happily eat it every day for lunch.

  9. Just made this! perfect for a cold Canberra, winter’s eve! Thanks again for another lovely recipe!

  10. This is a definite winner! Making my second batch in three days – I’m thinking this soup will be a winter staple in our house Nik! Thanks again for another awesome recipe 🙂

  11. I made this on the weekend minus the bacon and could not believe how much flavour it has!! Using home-made tomato paste and stock concentrate definitely gave it a bit of a kick and I am loving the vege content! Thanks for a great recipe Nik, it was so tasty I just kept going back for more xx

  12. This soup is amazing! I did it without the pasta so lower calories. It is a taste sensation! Thank you

  13. This was gorgeous!!! Didn’t have a lemon to zest for garnish, and only had 1/2 an onion, but it was still sooo delicious. Thank you for yet ANOTHER great recipe, Nik 🙂

  14. Another beautiful recipe! I’m generally not a soup eater but this is delicious! success yet again Nik x

  15. Made this for lunch yesterday, nomnomnom. I added a bit more salt but other than that easy and tasty

    Thanks Nikalene

    1. Great soup I used up some kale and leek to add to mine. Easy recipe that’s a favourite in our family

  16. Thanks Nikalene for another great recipe! This soup is delicious. Instead of bacon, I used a pork shank I had in the freezer. I boiled it last night with herbs so I used that pork stock as liquid, chopped up the meat, including the skin and added with some rinsed chickpeas instead of pasta. Yum! The lemon zest makes it super special xxx

    1. Great recipe i cooked with brown rice and added that at added that at STEP 4 . and cooked total 25 minutes
(If rice not cooked, cook a little longer.)

Added extra bacon and 2 chorizo sausages. Added another depth with a kick.
Cooked bacon and chorizo extra 5 minutes AT STEP 3

      Will make again
      thanks for another great recipe
