This Macachip Cookies Thermomix recipe is one of my first recipes that I blogged on Skinnymixers, and I have definitely eaten my fair share of these amazing cookies over the years.

If you are wanting to send these Thermomix Cookies to school, the Macadamias can be left out easily to make them nut free.

The coconut sugar in the recipe gives the most delicious caramel like sweetness, that mixes perfectly with the vanilla. If you don’t have Spelt flour – they also work well with plain flour.

This Macachip Cookies Thermomix Recipe, will have these healthier cookies baking in no time at all. You may need to hide them, otherwise they will disappear quickly!

Ingredients

  • 30 g macadamia nuts
  • 130 g butter - cubed
  • 100 g coconut sugar
  • 1 egg
  • 2 tsp vanilla paste - or vanilla essence
  • 180 g white spelt flour
  • ½ tsp bicarb soda
  • ½ tsp baking powder
  • pinch of salt
  • 130 g mini choc chips

Instructions

  • Preheat oven to 180°C or 350°F fan forced and line two baking trays with baking paper.
  • Place macadamia nuts in mixer bowl, chop 2 sec/speed 5/MC on. Set aside.
  • Add butter, coconut sugar, egg and vanilla to mixer bowl and blend for 2 min/speed 3/MC on.
  • Add flour, bicarb soda, baking powder and salt and blend for 30 sec/speed 4/MC on.
  • Add mini choc chips and reserved chopped macadamia nuts and combine for 30 sec/speed 2/reverse/MC on.
  • Spoon walnut sized balls onto baking paper, ensuring to leave around 4 cm or 1.6" between each ball, and bake for 10 mins or until golden brown on top.
  • Cool for 5 mins before serving.

Notes

You can make these nut free by leaving out the macadamias, or replacing them with dried fruit etc.
You can also substitute the spelt flour for normal plain flour.
I use Enjoy Life Foods mini choc chips as they are a healthy alternative to store bought chocolate: containing only evaporated cane juice, natural chocolate liquor (non-alcoholic) and non-dairy cocoa butter.

  1. Another amazing recipe!! i have made these a few times im in love!!! just wondering if i could use coconut flour and if anyone knows how much?

    1. I use cashews…never tried walnuts but it would be fine. I also sometimes put m and m’s instead of chic chips.
