Shepherd’s Pie is a true winter classic… A great way to create a budget friendly, veggie filled meal in the Thermomix that is both delicious and comforting.

I opted to use low carb potatoes in mine, but you could easily substitute them with sweet potato or alternatively this popular mashed cauliflower recipe. To make this a complete meal, you can steam vegetables from step 5 if you wish, and you can also opt to make it dairy free or top with grated cheese too! Enjoy.

Ingredients

Mince Ingredients

  • 1 medium brown onion - peeled, halved
  • 1 medium carrot - roughly chopped
  • 2 cloves of garlic - peeled
  • 30 g olive oil
  • 300 g liquid beef stock - or 300g | 10.6 oz water + 1 tbsp beef stock concentrate
  • 70 g tomato paste
  • 5 g worcestershire sauce - or soy sauce
  • 1 tsp paprika
  • 1/4 tsp cracked black pepper
  • 500 g lamb - or beef mince
  • 100 g frozen peas

Rustic Mash

  • 500 g potatoes - unpeeled, cut into small cubes
  • 30 g butter
  • 30 g cream
  • 1/2 - 1 tsp salt

Instructions

  • Add onion, carrot and garlic to mixer bowl. Chop for 3 sec/speed 6/MC on. Scrape bowl down.
  • Add oil and cook for 5 min/100°C or 212°F/speed 1/MC off.
  • Add stock, tomato paste, worcestershire sauce, paprika and pepper to mixer bowl.
  • Insert simmering basket and put the mince inside the simmering basket.
  • Put your deep steaming tray in place with the potatoes inside. Cook for 20 min/steaming temp/speed 3. Break mince up with a spoon carefully half way through cooking.
  • Set your mince aside in your baking dish, preheat your oven to 200°C or 400°F and continue to cook potatoes for a further 5 min/steaming temp/speed 3, or until cooked.
  • Stir through peas and desired amount of gravy (liquid in the mixer bowl) through the mince.
  • At this point you can choose to rinse the mixer bowl if you want to, put your potatoes into the mixer bowl with butter, cream and salt - mash briefly for 3-4 sec/speed 4/MC on.  Repeat if required.
  • Top mince mixture with rustic mash and bake in the oven for 20 min, or until golden brown.

Notes

Bellini Users
Use your sharp blade for this recipe.
At step 5 use ST temp if using an Intelli and 120-130°C or 250-270°F if using a Supercook.
At step 6 use ST temp if using an Intelli and 120-130°C or 250-270°F if using a Supercook. Add on a extra cooking time if required.
At step 8 process until desired mash consistency.

    So I have lots of skinnymixer books but I came across this recipe when I googled what to do with some lamb mince I bought on clearance and I’ve never used lamb mince before.
    This recipe is amazing. I knew it would be such is my faith in skinnymixer recipes so I doubled the recipe. The mince was packed tight and I stirred it a bit and extended the cooking time.
    Anyway it’s great. I used all the gravy and chucked some mushrooms in too to use them up.

    Made this tonight and it was amazing. Did the slow cooker version and served with Rustic mash (both white and sweet) and steamed veg. Will definitely do again

  5. Yummo! I use a little more mince (maybe 700g), some lightly pan fried diced bacon as per your suggestions, and any extra veggies (such as capsicum, tomato, zucchini). My kiddies love the mash cooked the old fashioned way on the stove but everyone was licking their lips and wanting leftovers. So much for making extra for lunch tomorrow 😂

    Oh my was absolutely delicious. Used pork and veal mince. Not having to peel potatoes was a bonus. Thinking can make with pumpkin to lower point value. Whole family loved it. 👌

    Another family favourite. I steam some cut veg and cook the spuds after and add that to the mince to bulk it out a little more so I have leftovers. Love these quick and easy dinners that taste amazing!

  8. I am sure I actually remember when this recipe was released but for some reason I waited until now to try it!! It is sooooo delicious. I really loved it. My 7 year old wolfed it down. The almost three year old was more particular but she still 8 some which is a big win. For here is usually spag bol or die. Thanks for a yummy easy recipe. I will make it often.

  9. Amazing! Just did it with minced beef and substituted 500g cauliflower for dessert he spuds. I applied bacon and spring onion (all I had) suggestion stirring it through the mash… family loved it!!

  10. This is an easy, regular “go to” recipe in our household. I made it today with 1kg of beef mince and also added grated zucchini to the listed ingredients. I also tried cauliflower mash (Tanya’s no fail) for the first time and it worked a treat! Making a bigger batch allows for leftovers for lunch the next day.

  11. We love this Shepherds Pie recipe. It’s perfect comfort food. Two questions: Has anyone tried doubling the recipe, or even 1 1/2? I find that when we’re feeding more than two adults plus the kids, it’s not quite enough. Also, best spud for mashing in the thermie? Thanks for a great recipe.

      1. Does the mince cook through? I have just put in 1kilo of mince and it’s packed in rather tight so I’m worried it won’t cook properly?

        1. It does cook through, but you should stir it. The dish does go in the oven – so you do have that extra oven time. There is a danger of blocking the steam holes of the machine when you overload the basket. Perhaps try moving it to a frypan next time x

  12. Love this recipe it is so easy and always delicious. Today was with sweet potato. Have made this a few times now.

  13. I made this for dinner last night and I am unsure why I haven’t make this recipe before now.
    I used 600g of beef mince and added half of a diced red capsicum to the beef before adding the sauce. I also didn’t have cream, so substituted with sour cream which was delicious. I am so thankful that you made the suggestion to add bacon and onion to the mash, it took the dish to yet another level.

  14. Another delicious recipe – thank you! As others did, I added some extra veg to the gravy and a can of lentils into the baking dish at the end with the meat. I used nuttelex and almond milk in the mash potatoes to make it dairy free. And fussy Miss 2 ate 2 bowls!

  17. I have a Magimix Cook Expert and recently made Nik’s Rustic Shepherds pie with leftover slow cooked lamb shoulder. I made the sauce in my Magimix as per Nik’s recipe ( using the conversion chart on Magimix Tips & Techniques FB page). I then chopped up cooked lamb shoulder into chunks and used Food Processor to whizz to the consistency I liked. Combined sauce and meat and covered with a mix of mashed potato and pumpkin. It was delicious.

  18. Made again tonight and added a Tin of lentils to the cooked mixture. With the carrot onion and garlic at the start I added a handful of mushroom, a zucchini, celery and half a red capsicum. So good

    1. It is the Varoma setting, turn your temperature dial all the way around to the right past the highest temperature 😁

      1. Winner! I used (more than recipe suggested) frozen peas corn and carrot instead of just peas. Fussy kids went back for seconds leaving us with no left overs. My favourite dilemma. Thank you
