Super budget-friendly & meat-free – introducing our Chickpea Pot Pie Filling. Topped with the most delicious Biscuits, or Silky Sweet Potato Mash, Cauliflower Mash or puff pastry… this one makes quite a bit and can also be made with chicken instead if you aren’t a lover of chickpeas!
I am not the first person to run to developing vegetarian dishes, and I was really putting off writing this recipe – but the day that I developed this I declared it the best recipe in SkinnyAmerica.
Now I know I have probably said that about a handful of recipes, but it should give some indication that this is an incredibly delicious dish.
The addition of the Biscuits on top, while not required, makes it an incredible hearty dinner that will impress even the most fussy meat eaters.
What you will need:
- leek
- garlic
- olive oil
- kale, English spinach/silverbeet, stems removed, roughly chopped
- Stock Concentrate
- tomato paste
- Worcestershire sauce
- sweet paprika
- tin chickpeas, drained, rinsed (or chicken thigh)
- frozen mixed vegetables, defrosted (or small diced veg)
- cream of choice
- cornflour
- Biscuits, puff pastry or Silky Sweet Potato Mash
