This recipe is 10/10 FANTASTIC. I am so appreciative to Lailah Rose for allowing me to blog it.

Here are some of the best tips or hacks for the perfect Naan.

  • If you need Gluten Free Naan – use GF Laucke Bread flour as a straight swap.
  • Make sure your rolling surface and hands are covered in flour, this helps if your dough is a little too sticky.
  • Feel free to change the fillings – if you don’t like spinach… no problem!
  • Nigella Seeds can be difficult to come by. Grandma’s Pantry Online stocks them and your local Indian Supermarket or The Source Bulk Foods should also have them.

Everyone is always searching for the best Thermomix Naan Bread recipe, well look no further we have this special guest recipe from Lailah that is sure to please.

Ingredients

  • 2-3 cloves of garlic - peeled
  • 2 tsp instant dried yeast
  • 500 g bakers flour
  • 20 g oil of choice
  • 1 tsp salt
  • 300 g water
  • large handful of baby spinach - roughly chopped
  • shredded cheese of choice
  • nigella seeds for sprinkling - optional
  • butter or ghee for lathering

Instructions

  • Add garlic cloves to mixer bowl, chop for 3 sec/speed 9/MC on.
  • Add yeast, bakers flour, oil, salt and water in that order to mixer bowl. Combine for 15 sec/speed 3/MC on. Then 6 min/knead/MC on. Dont leave your thermy alone during this step.
  • Allow your dough to rest for 15 min in thermy, oiled bowl or thermo mat.
  • Preheat a pan to medium heat.
  • On a floured surface, cut your dough into 6 or 8 balls. Set aside, covered with a tea towel.
  • On a well floured bench, take one of the balls and roll it out to the size of your hand.
  • Place a small handful of chopped spinach and cheese in the centre.
  • Pinch the sides up to enclose the spinach and cheese inside the dough ball.
  • Turn your dough over, so the seam is on the bottom, and roll your dough out thin. Sprinkle with flour if needed. Sprinkle with nigella seeds if using.
  • Heat a heavy skillet or fry pan on medium heat. Place one naan and cook for 1–2 min until bubbles form. Flip and cook for a further 1–2 min, pressing down lightly for even cooking. For a charred look, briefly place the naan directly over a gas flame after cooking.
  • Repeat process for remaining naans.
  • After cooking each naan, wrap in a tea towel. Before serving, lather in butter or ghee if desired.

Bellini Users
At step 2 (if using an Intelli) use speed 6 for 10 seconds, then speed 1 for 2 minutes, then wait 1 minute. Repeat twice.
If using a Supercook, speed 6 for 15 seconds, then speed 2-3 for 3 minutes, rest for 1 minute then repeat.

  1. I made these with plain flour, fresh yeast and frozen (defrosted) spinach because that’s what I had at home. I also substituted 50g of the water for natural yoghurt. Even with so many tweaks, these were the absolute bomb and impressed our well culinaried lunch guests 🙂

  3. Made these tonight to serve with my sweet potato soup and for the kids to have alongside their leftovers dinner after soccer training. Put homemade pizza sauce and mozzarella in the kids ones and called them insideout pizzas – complete hit! Spinach and tasty cheese ones to go with my soup. Thanks for such an easy, versatile recipe.

    1. I haven’t tried it myself but there is a comment down further which says that she vacuum sealed and froze her naan bread to take camping. So I guess so. You can freeze regular bread so I can’t see why this would be any different.

  6. I made Lailah’s butter chicken and served it with this naan bread a few weeks ago. Whipped up the butter chicken again last night but without the naan bread and hubby said “this curry is amazing but naan bread makes everything better.” Luckily there’s heaps of left overs so there will certainly be naan bread tonight.

  7. Wow!!! We have a special Indian restaurant we go to because not only do they do great curries but they make the best naan bread…. Well they did. Then I tried your recipe Lailah, and they were just as impressive. I actually vacuum sealed my naan bread froze some and have some to take away camping,

  9. Despite knowing that when I make naan I usually tantrum and throw dough around my “too small” kitchen, hubby still requests I whip these up to go with Nik’s curries. Totally worth it and really, really yummy!
