The Quick Chicken & Sweet Potato Curry has been a popular recipe of mine for many years. I thought it would be a great time to revamp it, simplify it and make sure it works perfectly in all of the different machines that are now used in the community.

This Thermomix curry recipe is so easy, in fact it is just as easy to whip it up as it is to order Indian delivery and much healthier too!

    so so so yummy. I use coconut cream and serve it on a bed of crispy stir-fried kale and it’s delicious. Must have made this 30-40 times.

    Made this curry today as its a cold and wet day in Sydney and felt like a warm lunch.

    We decided to opt out the chicken and made the variant by using chickpeas instead.

    AMAZING! we had it with basmati rice and the children, husband and myself devoured it!

    I highly recommend adding the chili flakes if you want a little bit of kick, we used coconut cream as I couldn’t get milk lately at our local grocery store. and vegie stock paste in place of the chicken stock paste too.

    Defiantly going to become a regular in our house!

    Beautiful quick dish to make. I didn’t use sweet potato (so just added more chicken) because I didn’t have any and didn’t want to make a trip to the shop. Also only had one can of coconut milk and one of coconut cream to make the 400ml. Definitely one to make again and maybe with the right ingredients! Haha.
