Skinnymixers Buffalo Wings Thermomix

Who doesn’t LOVE Buffalo Wings? I know that they’re a staple in Sian’s diet, and because we want her part of the Skinnymixers team forever, I knew it was my duty to create a healthier version for her to enjoy. I learnt the trick of crisping up the chicken wings without frying from my friend, Sasha, who learnt it from a YouTube video – I used this recipe as a guide for the timing on these.

I hope you love them as much as Sarah, Kirsty, Todd our pool guy and myself did today! These Buffalo Wings are perfect served with my Blue Cheese Dipping Sauce or the Ranch Sauce from The Healthy Mix II.

Buffalo Wings Thermomix Recipe

Ingredients

Buffalo wings

  • 2 kg chicken wings - separated in to wings and drumettes
  • 2 Tbsp baking powder - NOT baking soda!
  • ½ tsp salt

Hot sauce

  • 150 g hot sauce - I recommend Franks original hot sauce from Coles or my Roasted Chilli Sauce
  • 40 g butter or olive oil
  • 20 g honey - optional for low carb/keto
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 2 pinches of salt

Instructions

  • Preheat oven to 120°C or 250°F, fan-forced. Line a baking tray and place an oven proof wire rack on top.
  • Pat chicken wings with kitchen paper so that they are as dry as possible.
  • Using a large bowl, toss chicken wings through baking powder and salt and place on rack in a single layer (its ok if they're touching, they shrink) to cook in the oven at 120°C or 250°F for 30 minutes.
  • Increase oven temperature to 220°C or 430°F and cook for a further 30 minutes or until wings are crispy.
  • When the wings are nearly finished baking, prepare hot sauce by adding all ingredients to mixer bowl and cook for 7 min/100°C or 212°F/speed 1/MC off. Once wings are cooked and crispy, coat with hot sauce and serve with Blue Cheese Dipping Sauce.

  1. I’m not sure where I went wrong. It didn’t say to turn the chicken wings anywhere in the recipe , so I didn’t but the underside of the chicken pieces were not crispy brown etc. Did I miss the turn the chicken part ? or was it meant to magically brown the underside. I did have it on a rack on a tray as recommended. And I watched the video that the recipe originally came from too.

  3. So hood Nik! Made these a few times now, but I use drumb sticks 😉 always a crowd pleaser!! I’ve never had anyone not polish off what they pick up, and always have an empty dish! Thank you :))

  4. Love these!!! Did as per recipe, no issues and tasted divine. Didn’t find them too hot using the Frank’s sauce. Just the right level of tingle. Will make these again and again

  5. I have made these three times and found them too salty the third time i used no salt and they were a little better but still salty. I tasted a bit of baking powder and that is salty so my fourth attempt will be no salt no baking powder… I love them so will persist just found it weird as I haven’t seen any comments relating to saltiness.

  7. If I was to make the buffalo sauce as a gift, how long would it last for?

    Also, I made this the other night and literally said to myself, “these are the best wings i’ve ever had in my life”. Amazing! Best recipe ever!

  8. Amazing – we cannot get enough of these. So simple yet so delicious!

    As per all the comments on the FB page here are a few tips that might help:

    We have tried them as per the recipe with the baking powder, and with cornflour and preferred the cornflour coating – they seemed a bit crispier and had less of a ‘soap’ taste.

    We also did the sauce with blue cheese the first time (and were so pleasantly surprised at the magic of not tasting the blue cheese!) and with white costello and preferred the blue cheese version, it just seems to pair better with the spicy sauce.

    We also tried with the suggested hot sauce and found that a little sour, so next time did a mix of srihacha sauce, tomato and BBQ sauces and loved it. You can also adjust the heat to your tastes this way.

    Whichever way you decide to make these – just do it. They are soooooo good!

    1. I made these last night with chicken tenders as I don’t eat meat on the bone. They were yummy. I followed the recipe but next time I wouldn’t cook them for quite so long as they are a bit dry.

  9. Air fryer variation? My oven is stuffed at the moment. I could guesstimate, but just wondered if you had any suggestions.

    1. I’m going to try air frying tomorrow. We usually do other wings for 10-12mins for around 500gms. Would love feedback too on what others have done in the airfryer.

  10. How many oven trays will 2kgs fill? I’d really like to do a double batch but am unsure if it’ll fit in a standard oven lol

  11. I know it might defeat the purpose of having buffalo wings, but do you have any suggestions as to what I could use instead of hot sauce?
    Not chilli fans here but would love to find a way to make these that we can handle!

  13. Thanks for the new recipe!! Why do you need to separate the wings from the drumettes? What do you do with the drummettes – they aren’t mentioned again in the recipe?

    1. You don’t have to but it makes them easier to handle when eating. You use both the drummette and wingtip sections – no waste!!

  14. We travel to Honolulu for the best wings on earth, so if this beats them, we are in serious trouble for a reasontomgomback to Honolulu
