The skinnymixer’s Chunky Bolognese has been a popular recipe on the Thermomix Recipe Community for a few years now, and has some fantastic 5 star reviews. Recently I asked the community who felt like they were not using their Thermomix or Bellini as much as they thought they should be, nearly 3,000 people responded…

and so I launched a new initiative called Simple Meal Sunday, to inspire and encourage people to use their machines more. This spaghetti recipe is fantastic because its simple, healthy and budget friendly. It can also be reinvented into so many different kinds of meals, from Chilli Con Carne (using my Mexican Spice Mix), to Shepherds Pie (using my Silky Sweet Potato Mash) to name a few.

I have included both the low calorie/quick version which is HCG compliant and a version using fresh ingredients.

Ingredients

  • 1 tsp onion powder - or 1 medium brown onion, peeled and halved.
  • 1 tsp garlic powder - or 1 garlic clove peeled
  • 20 g olive oil - omit for quick version
  • 700 g tomato sugo/passata - from the supermarket
  • 50 g tomato paste
  • 30 g water
  • 20 g worcestershire sauce - optional, omit for p2
  • 1 tbsp stock concentrate
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/8 tsp cinnamon
  • 1/2 tsp dried chilli flakes - (optional)
  • pinch cracked black pepper
  • 700 g beef mince

Instructions

Quick & Low Calorie Bolognese

  • Add all ingredients to the mixer bowl, except for the mince.
  • Insert your simmering basket into the bowl and put your beef mince inside. Cook for 15 min/steaming temp/speed 4/MC on.
  • Carefully break up the mince with a spatula, cook for a further 15-20 min/steaming temp/speed 4/MC on. or until cooked.
  • Put your cooked mince into a serving bowl and pour your sauce over before serving.

Fresh Ingredient Bolognese

  • Add your onion and garlic to the mixer bowl, chop for 3 sec/speed 9/MC on. Scrape bowl down.
  • Add olive oil to mixer bowl and cook for 5 min/100°C or 212°F/speed 2/MC off.
  • Add remaining ingredients to the mixer bowl, except for the mince.
  • Insert your simmering basket into the bowl and put your beef mince inside. Cook for 15 min/steaming temp/speed 4/MC on.
  • Carefully break up the mince with a spatula, cook for a further 15-20 min/steaming temp/speed 4/MC on or until cooked.
  • Put your cooked mince into a serving bowl and pour your sauce over before serving.

Notes

This makes a large serve of bolognese, which will comfortably serve 6.
Smaller serve: You can halve this recipe by halving all of the ingredients and reducing the cooking time by about 3 minutes.
You can use chicken, pork or lamb mince as well.

Quick & Low Calorie Bolognese
Use blunt blade for this recipe.
At step 2 & step 3 use speed 3.
If using a Supercook, use 120°C or 250°F at step 4 & 5.
Fresh Ingredient Bolognese
Use blunt blade for this recipe.
At step 2 increase cooking time if needed.
At step 4 & 5 use speed 3.
If using a Supercook, use 120°C or 250°F at step 4 & 5.

    This is an absolute favourite my daughter and I have it regularly!
    Just wondering if I could dump the mince straight in the the sauce instead of putting it in the steaming basket?

    Our go to recipe. Amazing and a winner with the whole family. We add hidden carrot and mushroom, and a splash of red wine.

  3. I have a tm6. Had no idea how to do the cooking part of steps where i have to steam for 15 mins and then again for another 15 t 20. All i can here with the right hand dial set at 3.0 is a lot of bubbling. On 4 I thought this is going to cook the crap it of the sauce. The instructions are not for new users

    1. This recipe is available on Cookidoo as guided cooking for the TM6 if it helps? Steaming temp is varoma – we cater for other machines, not just the Thermomix with the instructions x

  6. Still new to Thermomix cooking. Tried this Skinnymixers Chuncky Bolognaise.
    OMG!!! Delicious!!! I read peoples comments before I started. So I added a little extra of suggested ingredients.
    The chilli flakes give it a beautiful kick.

    I made this via cookidoo, and we quite enjoyed it. I did add extra garlic, as well as 2 carrots, two-thirds of a zucchini and a 1.5inch thick slab of eggplant when I did the onion to use up some crisper items and up the veggie content. It did make for a rather full bowl, though no leakage happened.

    I got 3 serves for me (larger than I would normally eat) and 3 XL serves for my husband.

    I think next time I’ll add slightly more tomato paste as I’d like a bit more tomato flavour (although perhaps it would have been enough if I didn’t add the extra veggies)

    Made this tonight. My 3 boys gave it 10/10.
    Hubby who hates spaghetti Bolognese loved it.

    I added extra garlic cloves and some bacon in the at the start with the onion and garlic. Will add a little more chilli for our taste next time.

  9. Hey, I tried the spag bog last nite for the first time. I cooked it for the first 15min ok. Then when I put it back on the blades were hitting the basket? I couldn’t work out how to make this stop so had to finish it off in the fry pan. Can anyone help with what might be wrong? What temp is Steam? Is it Varoma!

  10. I made the full ingredient version with a few changes. I didn’t have passata in the cupboard so I threw in a can of diced tomatoes and topped up the rest with red wine. I’d probably increase the tomato paste to make it a bit richer as it has quite a vege taste, which was fine but my family likes a rich thick tomatoey sauce.. When the mince was cooked in the steamer, I put it back into the sauce and put the Thermie onto about 75 degrees and into reverse function just to stir it. I also thickened it at the end with some cornflour paste. My family though it was awesome!!

  11. Amazing! First time making sauce from scratch and it’s so good. Combined with the carbonara sauce it made an amazing lasagne. Will be adding this to the regular meal list!

  12. I’m sorry Bly halfway through cooking but already my TM31 bowl looks very full. The only extra I added was a carrot & zucchini. Is this right? Thanks skinnies x

    1. Yes, the carrot and zucchini makes a big difference in bowl capacity in tm31 – just leave it out next time, will be delish without it!

    But what does the p2 stand for in this comment ?

    20 g worcestershire sauce (optional, omit for p2)

    1. P2 is for anyone doing Changing habits HCG. P2 hands for phase 2 which is in the diet/protocol. If your not doing HCG, then ignore this.
