When I first tried this risotto, I knew it was without a doubt the best risotto I had ever eaten – and lots of the development team agreed.

This Cheesy Chorizo Risotto is very simple (and fast to cook!), but relies on quality ingredients for best flavour – choose a good quality chorizo.

In the Skinnymixer’s HQ test kitchen we have been using Wurstel Chorizo or for a gluten-free option the Provedore Free Range Chorizo (both pictured below) from Coles. You can use any good quality cured chorizo though or see our swaps in the variations if you can’t eat chorizo.Wurstel Chorizo

  • Chicken Stock Concentrate
  • brown onion

  • dry white wine - or verjuice
  • baby spinach

    Oh my, definitely makes a huge difference what chorizo is used ๐Ÿ˜ฒ

    First time I made the Cheesy Chorizo Risotto, I had Primo in the freezer so that’s what I used. I didn’t mind it, it was even quite good, but thought the chorizo could have been tastier, less fatty. I am iffy on fatty sausage meat so thought it was just me, but Glen thought it was kinda okay, but meh. He’s fussy with anything cheesy ๐Ÿง€ but was willing to give it another shot with a better chorizo.

    Then, I discovered that the team ๐Ÿคผ suggested Wรผrstel chorizo. Well, I bought it and had it sitting in my fridge to try. The stars aligned ๐Ÿคฉ that I also had the exact amount of baby spinach leaves needed ๐Ÿƒ

    This time, I air-fried an extra stick of chorizo and sprinkled it on top. Not sure what was going on with my scales by then, but may have added extra cheese ๐Ÿง€ ๐Ÿคญ Added baby spinach ๐Ÿƒ last minute so that they slightly softened but didn’t cook.

    If you want very mild, stick to Primo or even ham or bacon. ๐Ÿ–๐Ÿฅ“ but if you want flavour with more but not too much heat, the Wรผrstel made a huge difference.
