My Coconut Curried Sausages Adapted For Thermomix

Coconut Curried Sausages is the first Thermomix recipe I ever “developed”.

Now, I had never heard of curried sausages in my life… so I jumped on Google and browsed about 100 recipes.

With this concept in my head that it would be creamy and coconutty… only to find it was more of a tomatoey dish with supermarket curry powder in it. PASS!!!!

This Thermomix recipe is really delicious, but more of a comfort meal in the Skinnymixer household. 

I converted it to Thermomix a few years ago and whenever someone asks for a curried sausages recipe, I find the original version raved about. Usually we do it with frozen peas, but I didn’t have any on hand so chucked in some baby spinach – which we actually now prefer.

Ingredients

  • 1 small brown onion - peeled, halved
  • 30 g butter or oil
  • 1 kg thin beef sausages - we use gluten free or grain free when available
  • 300 g basmati rice - use half for tray bake version
  • 1-2 Tbsp babas meat curry powder
  • 2 Tbsp stock concentrate + 850 g | 30 oz water - or 850 g | 30 oz liquid stock instead
  • 60 g tomato paste
  • 400 ml tin coconut cream
  • 200 g frozen peas or baby spinach

Instructions

Thermomix Method

  • Place sausages on deep steaming tray, in a layered up ladder style to allow for air flow.

  • Weigh rice into the simmering basket and rinse well.
  • Put the onion into the mixer bowl, chop for 2 sec/speed 6/MC on. Scrape bowl down.
  • Add butter and cook for 5 min/100°C or 212°F/speed 1/MC off
  • Add curry powder and cook for 1 min/100°C or 212°F/speed 1/MC off
  • Add water, stock concentrate and tomato paste to bowl. Put simmering basket with rice in place. Put the steaming tray in place. Cook for 20 min/steaming temperature/speed 4.
    Periodically stir rice up with spatula while cooking.
  • Remove sausages. Remove rice to a thermo server to keep warm. ** do not drain liquid, keep it in bowl**
  • At this point you can choose to peel the sausages and then slice them as preferred.
  • Insert butterfly, add sausages coconut cream and peas to bowl. Cook for 8 min/100°C or 212°F/reverse/slowest speed.

Tray Bake Method

  • Preheat fan forced oven to 180°C
  • For the tray bake method we halve the rice to 150 g & use coconut milk.
  • Add sliced onion (fry onion if you prefer), tomato paste, curry powder and coconut milk to large deep ovenproof metal pan mix to combine. Once combined add in the stock concentrate and water and stir through.
  •  Add in pre-rinsed rice to the sauce in the pan. Then evenly place sausages in the pan.
  • Transfer the pan to the oven on the top rack and cook for 30-40 mins. If your dish is not metal it will take longer.
  • Add in peas into the pan in the last five minutes of the cook time.

Notes

You can omit the rice for grain free, and add extra veg to the steaming trays if you desire... just use only 500 g or 17.6 oz water.
The quality of the sausages have a big impact on this dish, you can substitute chicken breast or chicken thigh utilising the same cooking instructions. It is also popular with chicken sausages or sausages cooked on the BBQ instead of steamed.
The sauce is a runny sauce which is soaked up by the rice for extra flavour.
You can find the curry powder at Asian and Indian grocers or online at Grandma's Pantry.
If you don't have Babas, please be mindful of how strong your curry powder is if you need the dish mild. Babas is quite mild so if using Keens you may not want 1-2 Tbsp. Check out http://skinnymixers.com.au/ingredients/
Bellini Users
Use the blunt blade for this recipe.
At step 4 you may need to increase the onion cooking time.
At step 6 if using an Intelli place a tea towel over the steamer lid, use speed 3 and increase cooking time if required. If using a Supercook please use speed 4.
At step 9 DO NOT use your butterfly and be sure to use speed 1.

  1. We had this last night, such a quick, easy recipe packed with flavour, my husband and I aren’t the biggest fans of coconut cream / milk though and found it a bit sweet, anyone tried with sour cream or something similar?

  2. Thanks for another great recipe Nik! Master 7 loved it so much he came and asked for “a whole other bowl full” even though it was quite spicy for him (I used 2 tbsp of Babas)! Told him it was a Skinnymixers recipe and he said – her recipes are ALWAYS yummy AND healthy! Spot on mate! 🙂

  3. Another cracker! I had 500g of leftover sausages and cooked another 500g as per recipe. Didn’t have peas or spinach so steamed some sweet potato and broccoli on the top tray for the 20 mins and added with sausages to bowl for 8 mins. Thank you again for making my dinners so impressive!

    1. Did you do the potatoes in the basket instead of the rice? I’m going to do mash instead today but not sure where to put the potatoes to cook them.

  6. Well, I must say, despite all the reviews I didnt think I was going to like this as I too am not a fan of sausages. However, the flavours in this dish are so yummy, it completely turns the flavour of sausage not only into something more than edible – actually something really good. It dooesnt look great but try it…it’s so quick and easy.

  7. I made this for my very fussy partner. It is now a regular dish in our house. He likes food spicy so I chop chilli as a garnish for him. Such a fantastic dish!

  8. This recipe was delicious. Thank you so much. My hubby and girls all gave it a double thumbs up.
    I omitted the peas and added steamed carrot and pumpkin. I also added a bit of honey for sweetness and corn flour to thicken as I added coconut milk instead of cream.
    Will definitely be making this again.

  9. Quickly becoming a family fav! Easy, hubby loves it and great reheated for when we are on night shifts!! Will be great when our first bub comes and I don’t feel like cooking as it gives us plenty of left overs! I use less sausages and add a tray full of veggies like zucchini, carrot and broccoli

    1. Tried it with rice and quinoa – didn’t cook the rice believe it or not… Tried for 40mins to cook it, no luck. Threw it out and cooked quick packet rice to serve

      1. Same here. I used brown basmati rice which usually takes about half hour on the stove… i still wanted the yummy flavours that it had already absorbed so i put it on the stove top with extra water… will have to have another go to get it right next time..

        1. I find you really need to soak brown rice for at least 1/2 an hour before cooking otherwise it is seriously undercooked & the edc recommends cooking brown rice for 40min, hope these tips help ☺

        2. I used brown basmati too and just cooked it for 25mins like the packet instructed (instead of 20) and it worked perfectly.
          You must stir the rice a couple of times like the recipe states.

  14. Thanks Nik, this meal was amazing. So easy to do and so forgiving for ingredient substitutions. I used one tomato from a tin of whole tomatoes (didn’t have tomato paste) only had about 300g of coconut cream and pimped it up with carrots and mushrooms as well as the peas. I absolutely loved it and my family did too. Thanks again for a great recipe.
