skinnymixer's Tandoori Marinade

This weeks peoples choice winner was a Tandoori Thermomix marinade. You might also know this as Chicken Tikka; and its usually served bright red – to the point of wondering if you needed a Geiger counter to accompany dinner.

This Tandoori marinade recipe is made without the addition of Tandoori food colouring, but if you do want to achieve that neon red glow you can add 1-2 tsp before marinating. 

I chose to test it out with chicken legs and thighs, but it will work with most protein and vegetables.

We served this with Palak Raita as an entrée, and it will be a popular dinner coming into the hotter months in the Skinnymixer’s household, especially as the paste recipe gives you 4 lots to use! Please, read the notes for further instructions.

Ingredients

Tandoori Paste

  • 1 tsp black peppercorns
  • 4 green cardamom pods
  • 2 whole cloves
  • 300 g brown onions - peeled, halved
  • 60 g garlic - peeled (about 12 cloves)
  • 80 g fresh ginger - sliced into coins
  • 1 tbsp smoked paprika
  • 1 tbsp mild paprika
  • 4 tsp ground cumin
  • 4 tsp ground coriander seeds
  • 4 tsp garam masala - if you haven't got pepper free, omit the peppercorns
  • 2 tsp ground turmeric
  • 1-2 tsp cayenne pepper - depending on spice preference
  • 30 g olive oil

Tandoori Marinade

  • 1 portion of tandoori paste
  • 250 g Greek yoghurt - I use Jalna
  • 30 g fresh lemon juice
  • 2 tsp salt
  • 1 tsp honey - optional for sugar free

Instructions

  • **Please Note: This recipe requires 24 hour marinating for best results**

Paste

  • Add peppercorns, cardamom and cloves to mixer bowl. Insert simmering basket and mill for 10 sec/speed 9/MC on. Remove your simmering basket, ensuring to retain any milled spices in the bowl by tapping it gently.
  • Add remaining paste ingredients and blend for 10 sec/speed 9/MC on. Scrape bowl down and repeat once.
  • Portion out the paste into 4 x lots and freeze individually.

Marinade

  • Add all marinade ingredients to mixer bowl, combine for 5 sec/speed 3/MC on.

Notes

Makes enough marinade to marinate 1 kg or 35.3 oz of meat.
Marinate your meat in the fridge, covered, for 24 hours for best results. Scrape excess marinade off of the meat before grilling, oven baking or frying.
For those who are dairy free, you can skip the yoghurt and just marinate your meat with the paste.

Tandoori Paste - Repeat milling process in Step 1 until spices are ground. Add remaining paste ingredients and blend. You may need to repeat Step 2 twice to achieve paste consistency.
Tandoori Marinade - Extend mixing time until combined.

Smoked Tandoori marinated chicken thighs in my Traeger!

My plan was to then cut them up and cook them in to my butter chicken sauce but I ran out of energy 🤣🤣🤣🤣🤣

Then I smoked them in my Traeger at 257f until an internal temperature of 165f 🙂 big thanks to Grant Neal from The Smoking Joint for giving me the low down on how to cook these gorgeous thighs 😍😍😍😍

  1. Made the paste at the weekend – so easy and then had the chicken thighs marinating from last night – so tasty. I will not be buying tandoori marinade from the shops again!

  4. I have cooked this twice this week as there was no left overs and I had to have it again. I used mixed chicken pieces and my son cooked them on the barbecue for me. Cooked this way they have a lovely charred flavour and taste delicious. Love the marinade and will definitely keep my freezer stocked with the paste.

  5. Seriously YUM! I used legs as they were on special, marinated for about 30 hours and cooked on the BBQ. The charcoal effect was just like eating straight from the Tandoor. Next time I’ll double the paste to freeze, as I can see this dish will be on repeat a lot in our house. You are a serious foodie Nik, well done again on a fab recipe

I marinated 1kg of chicken breast and cooked on the BBQ last night, the entire family loved it, we have lots of leftovers for healthy lunchboxes!   7. I made this last night so it could marinate for as long as possible…absolutely incredible! I cannot believe I cooked something as delicious as this!

    I’ve never eaten it before and never eaten at an Indian restaurant before either so it was all new to me.

    I matched it with the Palak Raita, Devine, and made the pita bread to make wraps.

    I wasn’t too sure how the pita would work out as they didn’t look too good, but I shouldn’t have worried!

    I don’t usually comment on these things as there’s normally so many other raving reviews, but I had to this time.

  10. Nik, you’ve done it again!! The flavours in this tandoori marinade are amazing! I used chicken breasts which I cut into larger chunks and fried on a grill pan on my stove. The house smelt amazing as I was cooking it! My partner absolutely demolished his serve with rice and your palak raita and then went back for more by putting it into bread rolls to make his own tandoori chicken burgers! Best thing is that I have enough paste for another 3 meals. Thank you so much for sharing your clever recipes with us x

  12. Had this tonight with Cous Cous and Palak Raita. Only marinated for 6 hours and reduced the cumin as my fussies aren’t great with spicy. They ate theirs and loved the Raita. Yet another Skinnymixers recipe that can be served again.

  13. I enjoyed this marinade but didnt find it like other tandoori i have had it didnt have the kick i was looking for. I served it with cauliflower rice. Fuss pot hubby and kids didnt enjoy it 😕

  17. My fussy 5 year old helped me make this yesterday. When shopping for our spices he saw a bright red packet of tandoori colouring so we bought this and added about 1/4 tsp of this as well. We used chicken tenders, and although we only marinaded for about 4 hours, it tasted amazing! My son ate two pieces and even had a little cauliflower rice too. He has even requested the chicken in wraps for his school lunch. A big success!!! Thank you for another fantastic recipe!

  19. Yet another amazing recipe!!! Loved it so easy to make and so delicious. Let it marinate for 2 days as we went out for dinner on the night we were meant to have it. Served it with the palak raita and vegetables.

  20. Amazing!!! This was so easy to make and the fact that I have three serves of the paste in the freezer is going to make it even easier next time. I used the marinade on pieces of chicken breast and it was so good. I served it with a salad but next time I’ll also make the palak raita to go with it.
