Skinnymixers Beef stroganoff

For years the Skinnymixers Community begged me to do a Beef Stroganoff Thermomix recipe.

I finally tackled this healthy family favourite for the cookbook, The Healthy Mix II.

This recipe is a quick cook and not low and slow. I highly recommend getting a good quality steak to slice very thinly.

Recently, I have been learning to forage for wild mushrooms and with an abundance of wild mushrooms one needs some delicious mushroom recipes! Beef Stroganoff would have to be one of recipes that I get the most requests for and I finally felt ready to tackle perfecting this family favourite which I am sure that you will all enjoy.

Ingredients

  • brown onion
  • garlic
  • Swiss brown mushrooms
  • tomato paste
  • stock concentrate
  • seeded mustard
  • Worcestershire sauce
  • smoked paprika
  • good quality beef steak - very thinly sliced (see notes)
  • sour cream
  • fresh flat leaf parsley

  1. We did really enjoy the recipe, but the sauce was way to thin for our liking. I feel like this recipe is in need or a roux or perhaps cornflour? Did anyone else have this issue? Maybe just us?

  2. Good god this was hot. I used Grandma’s pantry Smokey Paprika. I made it with mince, intending it to be for my 23-monther. Hubby and I ate it, but will bin the rest. .

  4. Finally got around to making the Beef Stroganoff and I have no idea why I didn’t try it earlier!
    Amazing flavour and such an easy dish to make!
    Will be on high rotation on our menu from now on.

  5. This recipe is so yummy, Nik you are a genius! So easy, my husband cooked tonight and left the mushrooms out as I’m not a fan and served with fettuccine. Will definitely be added to our list of easy weeknight dinners.

  8. This was BY FAR the nicest strog ive ever eaten. Quick and easy meal which was loved by all… Miss 2.5 of course said it was ‘yuck sgusting’ but managed to eat it all 😂

  9. 2 out of 3 of my children are really fussy eaters and our whole family loved this. They just picked out the mushrooms. Was the best stroganoff I have ever had!

    You must give it a try. Used about a kg of mushrooms.

  12. Well what can I say? We are big stroganoff fans in our household and very excited to try this one. Hubby drank the rest of the sauce like soup at the end (he loves Worchestishire Sauce so much so loved the flavour). As always, an amazing dish Nik!

  15. Quick and easy meal. I put the varoma on top for the 5 mins the meat was cooking and once it finished tipped the stroganoff into the thermo serve then added water into the bowl (no washing) and then continued on cooking the vegetables. Perfectly cooked and get a clean bowl after!

  16. This is such an amazing recipe. Thank you Nik as my husband isn’t a big fan of mushrooms but with the sauce it was just beautiful and he ate it like no tomorrow. The paprika definitely compliments the recipe and so easy to make also.

  17. I made the variation. made fodmap friendly with garlic oil and spring onion greens. Delicious.

  18. Absolutely loved this!! So quick and easy to make, and full of flavour!! Was devoured by the whole family and will definitely be a favourite from now on!!
