Ingredients

Crumb Ingredients:-

  • 100 g almonds or breadcrumbs or sunflower seeds
  • 20 g sesame seeds
  • 1 tsp sumac or paprika
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • pinch of pepper
  • pinch of salt

Nugget Ingredients:-

  • 50 g Parmesan cheese cubed
  • 80 g zucchini roughly chopped (peeled if kids dont like green bits!)
  • 80 g carrot roughly chopped
  • 500 g chicken breast cubed
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • pinch of pepper
  • oil of choice for frying

Instructions

  • Add crumb ingredients to mixer bowl, mill for 10 sec/speed 6/MC on. Set aside on a plate.
  • Without washing the bowl, add Parmesan cheese to mixer bowl, mill for 10 sec/speed 9/MC on.
  • Add zucchini and carrot to mixer bowl, blend for 10 sec/speed 5/MC on. Scrape bowl down and repeat if your kids are fussy about hidden vegetables.
  • Add remaining ingredients, excluding oil, and blend for 15 sec/speed 6/MC on.

Assembly:-

  • Take walnut sized balls of mixture, roll and flatten to a nugget shape. Coat generously in crumb mixture and set aside. Repeat with remaining mixture.

To Cook:-

  • For the best results, shallow fry on a medium to high heat until browned on both sides.
  • You can also bake in a 200°C or 400°F preheated oven for 20 minutes, turning once half way through.

Notes

You can make these nut allergy friendly by either using breadcrumbs or sunflower seeds.
Play around with the crumb mixture with the available spices you have on hand.
You can increase the chicken to 700 grams or 24.7 oz without having to adjust any of the other ingredients, there will be enough crumb to stretch.
You can blend the crumb mixture for longer, to reduce the crunch/texture.

  1. I made these today for lunch and everyone love, love, loved them. My fussy 9 yr old said can we have them for dinner tonight too. I added some capsicum too that was I my fridge and they made them a pretty orange colour. I also used Panko crumbs and lightly fried them before finishing off in the oven. Next time I will employ child labour to roll them in crumbs because I know they will be a staple in this household. Thanks Nik for another delicious recipe

  2. Fooling my kids and their friends with healthy food disguised as standard overprocessed foods is a hobby of mine. This one works a treat.

  3. Definite flavour bomb! Loved these, so easy to make, so delicious. A hit with all the kids! These are totally going on regular rotation in the meal plan – thanks!

  4. These are great! Loved by everyone from age 1 to 30+. I make a big batch and then freeze after cooking as an easy freezer meal for another night.

  5. These were a huge hit with my grown up family and were demolished in minutes. I cooked them in the airfryer and they came out fantastic. Thanks for another simple but amazing recipe.

  6. made these today and they were delicious. so quick and easy. they were meant to be for school lunches but we ate them all. lucky there are quick to make. I fried them a little then baked them in the oven. they were super moist. . I don’t like chicken nuggets at all. but these were fabulous.

  7. Nik! Another amazing recipe. The husband and kids devoured them and were outraged I didn’t make more. I love the texture, such a winner for chicken mince as it can often be dry. So good! Thank you!

  8. Thanks Nik! Another winner in our family! I used the 700gm chicken and baked in the oven. Kids and hubby loved them! I froze (already cooked) the 8 that I had left over and they went into Miss 7’s school lunch box (frozen – thankfully I had made the version with sunflower seeds, so they were school friendly) on two occasions. They thawed in time for lunch. She loves having them in there with a little container of sauce for dipping. Absolutely brilliant.

  9. Thanks Nik, another huge hit!! I have made these multiple times since finding this recipe. I leave out the Parmesan (Paleo) and bake and they are delicious!! Thanks x

  10. Kids loved them for dinner last night and I’m enjoying them cold for breakfast this morning! Easy to make, will definitely make them again!

  11. Flavour bomb, and so filling that you’d not eat too many of them, unlike commercial nuggets!
I double this recipe and made this twice for a party and to store in the freezer (stored cooked).
They thawed easily and recrisped in the oven. Sooo yum!

  12. Another great dish to add hidden veggies. Great way to avoid take away nuggets as I’m not a fan at all and when the small child asks for chicken nuggets – I say yes, of course you have them! Because I know what goes in them and I know they’ll always be a winner

  13. These are a flavour bomb, and they are substantial nuggets that satisfy your appetite and fill you up, so you eat less than shop bought nuggets

  14. Yum, yum, yum! Made these as a quick dinner after work purely because I had all the ingredients on hand (except Parmesan – I substituted with tasty cheese). Loved by the whole family. Served with homemade salsa.

  15. As a fairly new Bellini owner I found the extra steps fantastic. The nuggets tasted great and they were just as good the next day cold from the fridge! Thanks, this recipe will become a regular.

  16. Yummmmmm!!! I made these in a hurry before work one day and left a note on the fridge for my partner with instructions on how to cook them… When I get home he’s already gobbled them up, said they were delish and didn’t believe me that there were veggies in them. He thought I must’ve bought them from a butcher. I adore these recipes and they have impacted the way I eat. You guys have to try these 😉

  17. I have made these 4 times now and they are a hit every time,I’ve mixed up the flavours a couple times and left out the cheese they are so versatile, these are my go to meals because everyone loves them kids and adults alike!

  18. Just spent three hours making these nuggets. Tripled the recipe. My house smells like nuggets. Pleased to report the nuggets are freaking delicious and the Master-Chef WannaBe Husband, Fussy Master 4 and Easy Eater Master 2 all devoured them. Thanks Nik. You jolly legend,
