skinnymixer's Macachip Cookies

This Macachip Cookies Thermomix recipe is one of my first recipes that I blogged on Skinnymixers, and I have definitely eaten my fair share of these amazing cookies over the years.

If you are wanting to send these Thermomix Cookies to school, the Macadamias can be left out easily to make them nut free.

The coconut sugar in the recipe gives the most delicious caramel like sweetness, that mixes perfectly with the vanilla. If you don’t have Spelt flour – they also work well with plain flour.

Notes

You can make these nut free by leaving out the macadamias, or replacing them with dried fruit etc.
You can also substitute the spelt flour for normal plain flour.
I use Enjoy Life Foods mini choc chips as they are a healthy alternative to store bought chocolate: containing only evaporated cane juice, natural chocolate liquor (non-alcoholic) and non-dairy cocoa butter.

  1. I used buckwheat flour and a teaspoon of xantham gum to bind. Worked great and still really yummy. Also used 3/4 coconut sugar and 1/4 brown sugar and it gave it a nice chewiness

  2. 5 stars
Love these cookies! I replaced the spelt flour with almond mill and the macadamia nuts for walnuts, and they are so light and tasty! Unfortunately it means that you can eat the whole lot in one sitting!

Hi Emma, I used gluten free flour, egg replacer and brown sugar instead of coconut sugar. They taste amazing even though I made 3 swaps 😂 I used dark no milk cooking chocolate chopped in the thermy for my ‘choc chips’, I used normal butter but I think it would be ok with nuttelex or margarine 🙂

  3. Delicious. Kids loved them. I’m hoping I can freeze for snack time when the kids are home. Might try nut free so they can be taken to school

  5. These are great, super easy.
Have been making them weekly for snacks during the week. Today used white and dark choc chips. Yummy.

  6. I used 70g of coconut sugar and cranberries instead of choc-chips and they are (or rather, were), delicious. Has anyone successfully frozen these and if so, did you freeze the mixture or the biscuits once cooked?

  7. Made these today and they are really yummy, so I’m told 😉 I only had 70gm coconut sugar at home and that was more than enough. Used white choc chips as I had some to be used. Thanks again for an easy, yummy recipe Nik

  8. Have finally made these and will definitely make these again as they are so yummy. Used plain flour and a little bit more salt.

  9. So I tried half coconut oil half butter and it came out beautifully!! How yummy are these. Substituted choc chips for cranberries and raisins – yummo!
