Well this recipe is definitely a surprise in the Top 10 for 2020!

With the release of my A Little Taste of Greece cookbook in 2020, it seems everyone was getting ready for the new Greek recipes by recooking an old favourite – Slow Cooked Greek Lamb.

The best part about this Slow Cooked Greek Lamb is definitely the gravy that is created by the marinade mixing with a little stock concentrate and the juices from the lamb cooking.

An old favourite has crept its way back into the Top 10 Recipes – Coconut Curried Pumpkin Soup.

It really isn’t hard to understand why, every time I make this recipe I wonder why I don’t make it more often.

Super budget friendly and FULL of flavour.

If you haven’t tried this soup with the addition of Babas Malaysian Meat Curry Powder, you are missing out 😉

#8 Rustic Shepherds Pie

Dropping a couple of places from #6 the Rustic Shepherds Pie is a family favourite. Simple, classic flavours that is sure to be popular with fussy eaters (young and old). We included a special Family Shepherd’s Pie with Hidden Veg in The Healthy Mix IV cookbook.

You can easily adapt this recipe to add extra vegetables or make it low carb with the addition of cauliflower mash.

You can also freeze portions for a fast mid-week. Simply pop into the freezer after adding the mash on top and bake in the oven when ready to eat.

With everything that was happening this year and a massive demand for cheap, available pantry staple recipes – I finally blogged my Red Lentil Dahl recipe from the group files.

Everyone seemed to LOVE the Red Lentil Dahl & I’m still surprised at how many people are still cooking it regularly.

I think this is definitely a great addition to the Top 10 Recipes for 2020.

We saw a flood of LCHF Chicken Kievs this year with the Skinnymixers Classics Collection released on Cookidoo. These LCHF Chicken Kievs will mean you will never want to buy another Kiev ever again. Bursting with flavour and so easy to make, you will want to try all the alternative filling suggestions from the Skinnymixers Community including Chile Con Queso filled and Butter Chicken filled Kievs.

Keep a batch in the freezer raw and bake them from frozen in the same amount of time it takes to make the ultimate side dish: Silky Sweet Potato Mash.

I definitely think the Southern Not Fried Chicken was one of the most cooked new recipes in Skinnymixers this year. 

I love to keep the mixed spices made up in a jar in the cupboard to have it ready to go for a quick & cheap delicious meal.

Loosely inspired by the KFC recipe on wikipedia, I am definitely glad I finally gave into Sian’s Skinnynag to make my own KFC recipe.

There is also a Southern Not Fried Chicken Bites recipe in The Healthy Mix V that my kids absolutely LOVE.

#4 Stock Concentrate

YESSS!! I’m so excited about this new addition to our Top 10 Recipes for the year. To me it means, so many more Skinnies took the time to take their dishes to the next level by making my Stock Concentrate!

I always make sure that I have a stash of the Chicken Stock Concentrate and the Beef Stock Concentrate in the freezer. It doesn’t freeze solid and can just be scooped out as needed.

Once made it will keep in the freezer for months, ready to take your dishes to the next level.

#3 Macaroni Cheese with a Twist

It seems the new updated version of this popular hidden vegetable Thermomix recipe, jumped it up to #2 in our Top 10. This recipe is popular with mums of fussy eaters. Give it a go and see if it is popular in your household. If your child doesn’t like the taste of cheese or prefers different cheeses, try different cheese combos.

If you need it to be dairy-free, try the Dairy Free Cheesy Spelt Pasta recipe.

Some other clever Skinnymixers have made the Macaroni Cheese with a Twist into frittatas perfect by following similar directions to the Risotto Frittatas with a Twist and adding egg to the cooled mix and baking in muffin tins.

Whether your family likes them extra mild or perhaps with chicken instead of sausages, there will definitely be arguments over the leftovers. For those that meal prep, this meal freezes and defrosts perfectly and is incredibly budget friendly.

This really is no surprise… Could the number #1 recipe be anything else than “The Butter Chicken”? Is anyone else sick of the Butter Chicken being at number 1?!? 

If you are new to the world of Skinnymixers or Thermomix, don’t be put off by the long ingredients list, set aside an afternoon and read through the comprehensive Butter Chicken FAQs if you are nervous. This recipe has been the reason for quite a few thermo cooker purchases. It is quite easy and straight-forward, once you get all your ingredients out ready 🙂
